Making the most of healthy spring eating with Cambridge Markets
The longer days are finally here and for many of us that means making the most of those extra hours of sunlight to enjoy cooking and eating outdoors. This time of year is all about gathering together over a simple, fresh meal, whether that’s in the backyard, by the beach, or in the park. Outdoor entertaining demands a certain level of casualness. Perhaps that’s why we love it so much – the pressure is off. Barbecues are one low-maintenance way to enjoy dining outdoors. Simply throw some snags on the grill and off you go. Or you could elevate your barbecue without any additional effort by cooking up some of Kingsmore Meats’ wagyu beef burger patties or a lamb shoulder with preserved lemon. If you prefer to keep things meat-free, this time of year offers up some of the best vegetables for vibrant salad compilations, such as broad beans, asparagus, tomatoes and corn. Try a broad bean, mint and feta combination served alongside cherry tomatoes blistered on the barbecue, tossed with fried garlic and drizzled with good olive oil. Both just need to be served with a crunchy baguette to mop up all that springtime goodness.
